I've made my very first cupcake with chocolate butter cream frosting. The frosting was super but the cupcake wasn't that good. I lost my old recipe for basic cupcakes and I can't seem to find it on the internet since I found it on a site. So I got stuck with a new recipe and it came out fine, at first. When I use paper cups they come out moist, smooth, fluffy and just perfect but when I use the silicone ones (because I love it when they don't have any cupcake liners and it's very easy when using silicone molds) they come out like bread! I mean they don't taste like bread at all, they're just kind of hard and ugly! I'm sure I didn't over mix the batter because those I made with paper liners came out great (I wasn't able to take a single photo though because monsters came running in the kitchen and started eating my cupcakes!)
I totally don't get it. Maybe it's because the silicone is doing something or whatever. I'm no cooking expert so I can't really tell. Otherwise they tasted good! : )
